    eating cold rice is bad for your stomach and could make you extremely sick.

    cold rice has these bacterias on them that grows as the rice cools. it could be killed when you reheat the rice.

    so keep them rice warm and you’ll be safe.

    If you plan on storing rice, have it cool down within an hour after cooking and then refridgerate it, then you can reheat it and eat. Rice shouldn’t be kept at room temperature overnight, if so, then they should be thrown away. The main reason for these is because the spores for food poisoning bugs can surive the cooking, then the spores can germinate while sitting there at room temperature. Cooked rice or any grain shouldn’t be kept for no longer than 2 days and they should only be reheated once. Suhsi rice is okey because of the vinegar and they are pretty much served right away after cooling down. Most Cambodian households I have been to seems to cook foods and leave them out overnight, which kind of scares me…all that bacteria and stuff have started growing already.

    Doesn’t refrigerating the rice slow down the process of the bacteria?? Rice is like any other food if you leave it out (70+ degree)

    Yeah, it does. Under 41*F it stops any bacteria from forming, but before refridgerating it, you will have to let it cool down first, and you can’t leave it out for too long to cool down, especially longer than a couple hours. I try not to leave food unattended at room temp for more than 3 hrs. Anywhere between 45-140*F is the danger zone. In between cooling the food down to storing, is the when bacteria can form fastest so, you have to cool it down pretty fast.

    Oh thanks, I usually leave my rice in my cooker all day when it’s below 65 degree.

    This is funny. hahaha I konw for a fact that a large number of KHmer people eat cold rice, cold as in room temp, not frozen.. i hope that’s what you meant…no Microwave in Cambodia, in 99% of the household anyway.
