Overview

Angkor Chef (also listed as Angkor Cambodian Restaurant) was founded in 2023 in downtown San Jose at 86 South First Street by chef Channy Laux, a survivor of the Cambodian genocide. Laux endured starvation, forced labor, and separation from her family under the Khmer Rouge between 1975 and 1979 before arriving in Lincoln, Nebraska as a refugee in 1979; she went on to earn a bachelor's degree from the University of Nebraska and a master's in applied mathematics from Santa Clara University. Her packaged-food company, Angkor Cambodian Food, received a sofi Award for its Southeast Asian ingredients, and her restaurant was later featured on Guy Fieri's Diners, Drive-Ins and Dives on Food Network. The kitchen specializes in Cambodian dishes such as amok (steamed catfish curry in banana leaves), somlaw machu kroeung (tangy vegetable soup), and Angkor noodles with pork belly, built around Chef Channy's award-winning lemongrass paste. Angkor Chef is positioned as a cultural hub celebrating Cambodian survival, resilience, and tradition in the Bay Area.
