  • Soybeans
  • Coconut milk
  • Sugar, a little

Preparation

  1. Soak the sticky rice and soybeans about two hours, then rinse them.
  2. Cut village bamboo at the joints so that one end stays open, and rinse the tube out.
  3. Mix the rice and beans with a little salt and sugar and the coconut milk.
  4. Pack the mixture tightly into the bamboo tube.
  5. Seal the open end firmly with coconut husk or banana leaves.
  6. Stand the filled tubes beside a long line of coals.
  7. Turn them so every side faces the fire as they roast.
  8. Cook gently, let the tubes cool, then peel away the burned outer layer.
