Ingredients

  • 6 tbsp yellow kroeung
  • 300 g beef tenderloin, sliced into two-bite pieces
  • 3 tbsp cooking oil
  • 4 cups beef or vegetable stock
  • 300 g morning glory (water spinach, trorkuon)
  • 2 tbsp fish sauce and/or 1 tbsp prahok
  • 1 tbsp tamarind paste, optional
  • 1 tbsp salt
  • 2 tbsp palm sugar, or brown sugar
  • 5 small red chillies, for garnish

Preparation

  2. Wash, trim and drain the morning glory, then cut it into roughly three-centimetre lengths.
  3. Marinate the sliced beef in the kroeung for about 15 minutes.
