"Food is Just a Hook" is the first episode of The Threaded Path, in which the host Amara Goel talks with the Phnom Penh chef and cookbook author Chef Nak. It was released on YouTube on September 12, 2026, as part of the first season, Phnom Penh: City of Rooted & Returning Voices.[1][2] The conversation is about growing up, questioning assumptions and her part in how the world sees Cambodia.[1]
About the episode
Chef Nak describes a childhood in which cooking was a survival skill from the age of four, learned beside her mother's market stall among Cham, Vietnamese, Chinese and Khmer neighbors whose food shaped her palate. Traveling the provinces for Cambodian Living Arts from 2005, cooking wherever she stayed, taught her that a dish made differently elsewhere is not a mistake but a record of region, season and story, and she came to see her notes on names, ingredients and methods as an archive she had built without meaning to.[1]
Trips abroad from 2010 showed her how few people knew where Cambodia was, and how often Cambodian cooks worked behind other countries' menus. She contrasts this with governments that promote their cuisines as culture and trade, and explains how, in 2017, with her family's backing, she committed to presenting Cambodia through food. She sets out three working principles: do what you love, make it financially sustainable, and give back by opening access to education rather than handing out money. She also describes the slow work of turning cooking by feel into written recipes her team can reproduce.[1]
The second half turns to the diaspora. She spent time with Cambodian families in Massachusetts in 2022 to learn how communities abroad hold on to their food, and she and Goel discuss why some of the most traditional Cambodian cooking survives outside Cambodia. Chef Nak argues that fusion and innovation are welcome as long as cooks are honest about what they serve, since every plate represents the country, and she reflects on learning, after ten years, to say no to work that does not serve Cambodia. The episode takes its title from her remark that food is the hook for a much larger story.[1]
